Sunday Sweets: Bam Pow Paleo Chocolate Liquorice Ice Cream

Ice cream two weeks in a row?  Oh yes I did!  And if you have a problem with that, then… well… I’m not sure we can be friends.

JUST KIDDING dear readers! Course we can, cause if you don’t like ice cream, there’ll be more for me.

This was seriously Captain Picky Approved. Like head in the bowl, licking it up. And I may have scraped the ice cream bowl out with my hands. No, it’s not rude. It’s hardcore primal. No utensils dudes!

Enjoy! In the weeks to come, as it inevitably gets colder, I’m sure my attention will turn to pies and other warm desserts.  Not to mention that Super Andy and I are starting our fourth Whole30 on Tuesday.

Bam Pow Paleo Chocolate Liquorice Ice Cream

Prep time: 5 minutes

Cook time: 45 minutes (15 minutes actual cook time and 30 minutes to let it sit) + time in your ice cream machine

Ingredients: 

1) 1 can (270 ml) coconut milk

2) 1 teaspoon vanilla

3) 2-3 tbl honey

4) 4-5 star anise

5) two finger pinch of salt

6) 2 egg yolks

7) either 6 squares dark chocolate (I used Green and Black’s 85%) or 2 heaping tablespoons dark cocoa (They both work well. Depending on your sweet tooth, you may want add a bit of extra honey if you use cocoa. I actually preferred it with cocoa and not much honey).

8) Crabtree’s Murray Darling Salts Liquorice Salt (I seriously have half a shelf devoted to different varieties of salt from here. Check them out online or at the Mornington and Mt. Eliza Farmers’ Markets).

Instructions:

1) Combine coconut milk, salt, vanilla, honey, cocoa or chocolate and star anise in a small pan.

2) Bring to a low simmer. Stirring frequently, keep it at this heat for about 10 minutes, to give the star anise a chance to get the flavour party started.

3) Beat the egg yolks in a separate bowl. Pour the hot liquid into the yolks, whisking constantly. The pour all the liquid back into the pan and bring it up to a  low simmer again.

4) Whisk until it starts to thicken slightly (about 5 minutes)

5) Let it cool for as long as you can stand it. The flavour will be more intense.

6) Make as per ice cream machine’s instructions.

7) Just before serving, sprinkle with some of Crabtree’s Murray Darling Salts Liquorice Salt.

8) Die and go to heaven.
