Sunday Sweets: Bam Pow Paleo Easy As Chocolate Avocado Pudding

Of all the Captain Picky Approved recipes, this is the ONLY one that he has eaten EVERY time. For anyone who’s ever made their kids “favourite’ meal or treat only to hear them declare, “I hate this!” as they push it away, you know the value of this.

My apologies in advance to those of you who are not kitchen rockstars or are maybe lacking a bit of culinary confidence as of yet. I don’t have exact amounts for this recipe because it depends on the ripeness of the avocados. Also, I like mine less sweet and more chocolate. That said, it’s pretty hard to mess this up. Go slow, taste test and experiment.

Bam Pow Paleo Easy As Chocolate Avocado Pudding

Prep time: 10 minutes

Serves: 4

Ingredients:

3-4 ripe but firm avocados (I don’t like to use really ripe ones as I find the flavour is too strong)

1/4 cup coconut oil, melted

3-4 tbl honey

1/4 cup cocoa or cacao

Method:

1) Fork mash the avocados in a glass bowl, then whizz them up with a stick blender. You can also chuck them in a blender or food processor.

2) Heat the coconut oil until it’s just melted and add to the avocados. Blend. If it seems really thick, add a bit more oil.

3) Add honey. Start with less and see what you think. You can always add more later.

4) Same with your cocoa or cacao. Start slow and see how chocolatey it tastes. This will depend a lot on your avocados and how strong their flavour is.

5) Add more honey and/or cocoa, a tablespoon at a time, blending and tasting as you go.

6) Eat the entire bowl with your Edward Spoonhands. Share. I can’t believe I still have to tell you that.
